Fast forward to today, and I've crafted my own turkey larb recipe that not only nails those authentic flavors but brings in some healthy twists. This dish is fresh, light, and bursting with flavor. It's perfect for gatherings, meal prep, or just a delightful dinner at home.

Ingredients
  

Dressing:
  • 1 tablespoon rice vinegar
  • 1 clove garlic, minced
  • 1/3 cup freshly squeezed lime juice
  • 3 tablespoons freshly squeezed lemon juice
  • 2 tablespoons fish sauce
  • 2 tablespoons honey
Larb:
  • 1/2 red onion, finely chopped
  • 3 shallots, thinly sliced
  • 3 tablespoons vegetable or canola oil
  • 1 (4-inch) stalk of lemongrass, minced about 1/4 cup
  • 1 Thai chile, such as prik kee noo, or 1 serrano chile, stemmed and finely sliced
  • Kosher salt, to taste
  • 1 1/2 pounds ground turkey, preferably dark meat
  • 1/2 cup chopped fresh mint leaves
  • Freshly ground black pepper, to taste
  • 1 head butter lettuce, leaves separated
  • 1/4 cup chopped cilantro
Serving suggestion:
  • Sticky or steamed white rice

Method
 

Step 1: Prepare the Dressing
  1. In a bowl, combine rice vinegar, minced garlic, lime juice, lemon juice, fish sauce, and honey. Whisk until everything is well blended. Set aside for later.
Step 2: Cook the Aromatics
  1. Heat vegetable oil in a large skillet over medium-high heat. Add chopped red onion and shallots. Sauté them for about 3-4 minutes until they start to soften. This creates a base flavor that’s incredibly aromatic.
Step 3: Add Lemongrass and Chiles
  1. Stir in the minced lemongrass and finely sliced chile. Cook for an additional 2 minutes. The lemongrass adds a delightful citrusy essence that complements the turkey beautifully.
Step 4: Brown the Turkey
  1. Next, add ground turkey to the skillet. Using a spatula, break up the turkey and mix it with the aromatics. Season with kosher salt. Cook for 5-7 minutes, or until the turkey is thoroughly cooked and no longer pink.
Step 5: Mix in the Dressing
  1. Once the turkey is cooked, pour the dressing over the meat. Stir well to combine. Let it cook together for another minute. I love how the flavors meld together here.
Step 6: Add Fresh Herbs
  1. Finally, remove the skillet from the heat and stir in chopped mint leaves and cilantro. These fresh herbs really make the dish sing.
Step 7: Assemble and Serve
  1. To serve, spoon the turkey mixture into butter lettuce leaves. Drizzle any remaining dressing on top. You can also serve this with sticky rice on the side for that comforting touch.
