Shrimp Fried Rice: No More Mushy Fried Rice Recipe - Friendsgiving Food Ideas

Shrimp fried rice is a staple in many cultures. It's quick to make, packed with flavor, and customizable to fit your dietary preferences. I've had my share of both fantastic and, let's say, less-than-stellar fried rice dishes.
Through trial and error (lots of errors!), I’ve honed this recipe into one that guarantees fluffy grains, fresh shrimp, and a taste that lingers long after the last bite.

  • 2 teaspoons cornstarch for coating
  • 1 lb raw shrimp or prawns, peeled and cleaned
  • ½ teaspoon ground white pepper
  • 1 teaspoon light soy sauce
  • ½ teaspoon sesame oil
Fried Rice Ingredients
  • tablespoons vegetarian oyster sauce
  • 5 cups of cold, cooked rice preferably day-old for best texture
  • 3 to 3 4 large eggs, lightly beaten and seasoned with a pinch of salt and pepper
  • tablespoons regular soy sauce
  • 2 cloves garlic, finely minced
  • 5 tablespoons neutral oil
  • 1 cup mixed frozen vegetables like peas, carrots, and corn
  • 4 stalks of scallions, finely chopped keep white and green parts separate
  • 1 teaspoon ground white pepper

Method

  1. Let’s get down to the nitty-gritty. Follow these steps, and you’ll be well on your way to shrimp fried rice that’s both scrumptious and texturally perfect.
Step 1: Marinate the Shrimp
  1. Start by marinating your shrimp.
  2. In a bowl, combine the shrimp with cornstarch, ground white pepper, light soy sauce, and sesame oil.
  3. Mix well and let it rest for about 15 minutes. This marinating process is not just for flavor; it ensures the shrimp stay tender during cooking.
Step 2: Scramble the Eggs
  1. While the shrimp marinates, it’s time to scramble the eggs.
  2. Heat up a tablespoon of oil in a large frying pan or wok over medium-high heat.
  3. Pour in the beaten eggs and stir gently until just cooked.
  4. Remove the eggs from the pan and set aside.
Step 3: Stir-Fry the Shrimp
  1. With the eggs cooked, now it’s time for the shrimp.
  2. Increase the heat to high and add a tablespoon of oil to the pan.
  3. Once the oil is shimmering, add the shrimp in a single layer.
  4. Let them cook without stirring for about a minute, then flip them to cook each side until they turn pink and are cooked through.
  5. Remove the shrimp and set aside with the eggs.
Step 4: Cook the Vegetables
  1. Now let’s get those vegetables sizzling.
  2. Add another tablespoon of oil to the pan.
  3. Toss in the minced garlic and white parts of the scallions.
  4. Sauté until fragrant, usually about 30 seconds.
  5. Add the mixed frozen vegetables and stir-fry for 2–3 minutes until they’re heated through and slightly tender.
Step 5: Add Rice and Sauces
  1. Time for the star of the show—rice.
  2. Add the cold rice and ensure to break up any clumps with a spatula.
  3. Drizzle in the vegetarian oyster sauce and regular soy sauce.
  4. Stir everything together, making sure the rice is evenly coated with the sauce.
Step 6: Combine Everything
  1. Now, you bring it all together.
  2. Return the cooked shrimp and scrambled eggs back to the pan.
  3. Sprinkle the ground white pepper and mix everything until it’s uniformly heated and well combined.
Step 7: Garnish and Serve
  1. The last step makes all the difference.
  2. Garnish with the green parts of the scallions.
  3. Serve hot and enjoy your culinary masterpiece!

Notes

Here are some extra nuggets of wisdom to elevate your shrimp fried rice:
  • Use the Right Rice: If day-old rice isn’t available, spread freshly cooked rice on a baking sheet and refrigerate it for an hour to cool down and dry out.
  • Don’t Skimp on Oil: A good amount of oil is crucial for preventing sticking and ensuring even cooking.
  • Experiment with Protein: If shrimp is not your thing, chicken, pork, or tofu would work marvelously in this recipe.
  • Customize to Your Taste: Feel free to swap the mixed vegetables with whatever you have on hand. Think bell peppers, broccoli, or snap peas.
Serve with Lime Wedges: A little squeeze of lime juice just before eating adds a vibrant zesty punch that brightens the dish.
