Step 1: Prepare the Fruit
- Begin by washing your fruit thoroughly. If you're opting for strawberries, ensure they are hulled and dried properly. Excess moisture can interfere with the candy process.
Step 2: Prepare the Candy Coating
- In a medium-sized saucepan, combine the sugar, lemon juice, and water. Stir well. Place the mixture over medium heat.
Step 3: Heat the Mixture
- Allow the sugar mixture to boil gently. Refrain from stirring once it boils. Instead, let it cook for about 5 to 10 minutes. Use a candy thermometer to monitor the temperature, aiming for 300°F (hard crack stage).
Step 4: Coat the Fruit
- Once it reaches this temperature, remove it from heat immediately. Let the mixture sit for 1-2 minutes to cool slightly. It’s hot!
- Carefully take a skewer or stick and dip each fruit piece into the hot sugar mixture, ensuring that it’s entirely coated. Swirl it around a bit for an even coat.
Step 5: Let it Set
- Place the coated fruits on a baking sheet lined with parchment paper. Allow them to cool and harden for about 30 minutes at room temperature.

Tip 1: Ensure your fruit is completely dry before dipping; any moisture will ruin the candy coating.
Tip 2: Use a candy thermometer. If you don’t have one, you can test the temperature by dropping a small amount of the sugar mixture into cold water; it should harden immediately.
Tip 3: Work quickly once you have the sugar at temperature. It hardens fast!
Tip 4: If the sugar cools and hardens too quickly, you can gently reheat it to soften.
