Ingredients
  

  • 2 cups fine granulated cane sugar
  • 1 cup filtered water
  • 1 tbsp freshly squeezed lemon juice
  • ½ tsp pure vanilla extract
  • 1 lb. ripe, hulled strawberries

Method
 

Step 1: Prepare the Fruit
  1. Begin by washing your fruit thoroughly. If you're opting for strawberries, ensure they are hulled and dried properly. Excess moisture can interfere with the candy process.
Step 2: Prepare the Candy Coating
  1. In a medium-sized saucepan, combine the sugar, lemon juice, and water. Stir well. Place the mixture over medium heat.
Step 3: Heat the Mixture
  1. Allow the sugar mixture to boil gently. Refrain from stirring once it boils. Instead, let it cook for about 5 to 10 minutes. Use a candy thermometer to monitor the temperature, aiming for 300°F (hard crack stage).
Step 4: Coat the Fruit
  1. Once it reaches this temperature, remove it from heat immediately. Let the mixture sit for 1-2 minutes to cool slightly. It’s hot!
  2. Carefully take a skewer or stick and dip each fruit piece into the hot sugar mixture, ensuring that it’s entirely coated. Swirl it around a bit for an even coat.
Step 5: Let it Set
  1. Place the coated fruits on a baking sheet lined with parchment paper. Allow them to cool and harden for about 30 minutes at room temperature.

Notes

Tip 1: Ensure your fruit is completely dry before dipping; any moisture will ruin the candy coating.
Tip 2: Use a candy thermometer. If you don’t have one, you can test the temperature by dropping a small amount of the sugar mixture into cold water; it should harden immediately.
Tip 3: Work quickly once you have the sugar at temperature. It hardens fast!
Tip 4: If the sugar cools and hardens too quickly, you can gently reheat it to soften.
Tip 5: Experiment with different fruits and flavorings for the sugar coating. Try cinnamon or a splash of orange juice for a unique twist.
