Ingredients
  

  • 1 1/2 cups of long-grain rice washed
  • 3 cups of low-sodium chicken broth or vegetable broth
  • 4 - pieces of salmon fillets
  • 1 teaspoon of seasoned salt
  • 3 teaspoons of olive oil divided
  • 1 - large onion, finely chopped
  • 1 - medium green bell pepper, finely chopped
  • 1 - medium red bell pepper, finely chopped
  • 3 - garlic cloves, minced
  • 1 - chicken bouillon cube
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of ground turmeric
  • - Salt and freshly ground black pepper, to taste
  • 1 - lemon zested and juiced
  • 1 tablespoon of freshly chopped parsley
  • 1 teaspoon of fresh thyme
  • A pinch of red pepper flakes

Method
 

Step 1: Prepare the Ingredients
  1. Before anything else, take a moment to wash and chop your vegetables. That way, when it’s time to cook, you won’t be running around like a headless chicken.

Step 2: Sauté the Vegetables
  1. Grab a large pot and heat 2 tablespoons of olive oil over medium heat. Toss in the chopped onions, green bell pepper, and red bell pepper. Sauté until they’re tender—this usually takes about 5 minutes.

Step 3: Add the Rice and Spices
