Step 1: Season and Prepare the Chicken
- Start by seasoning the chicken thighs with salt and freshly ground black pepper. Then dust each thigh with the cornflour. This step might seem small, but it helps to create that crispy outer layer that holds onto the luxurious sauce later.
Step 2: Sear the Chicken
- In a large pot or deep skillet, melt the unsalted butter over medium-high heat. When the butter starts bubbling, add the seasoned chicken thighs, skin side down.
- Sear them until golden brown, about 5-7 minutes. You want that beautiful crust, so resist the urge to move them around too much.
- Once golden, flip the chicken and sear the other side for another 5 minutes. After both sides are cooked, transfer the thighs to a plate and set aside.
Step 3: Sauté the Aromatics
- Using the same pot, reduce the heat to medium. Toss in the diced onions and minced garlic. Stir them around for about 3-4 minutes until the onions become translucent. You’ll want to inhale deeply here—there’s something magical about the smell of sautéing onions and garlic.
- Then, add the dried Italian herbs, smoked paprika, and onion powder. These spices will bring depth to the dish.
Step 4: Build the Sauce
- Pour in the tamari or soy sauce and homemade chicken broth. Scrape the bottom of the pot with a wooden spoon to deglaze any delicious browned bits stuck to the bottom. This adds flavor you don't want to miss.
- Let this simmer for a couple of minutes before stirring in the heavy whipping cream, thyme leaves, and dry white wine. The sauce should start to thicken and bubble gently.
Step 5: Add the Mushrooms
- Now it’s time to add the sliced mushrooms to the party. Mix them in well and let them cook for about 5 minutes until they soften and release their juices.
Step 6: Return the Chicken
- Nestle the chicken thighs back into the pot. Spoon that creamy sauce over the chicken, making sure they’re well coated. Cover the pot and let it simmer on low heat for about 20 minutes. This allows the flavors to meld and the chicken to cook through completely.
Step 7: Finish with Cheese
- Once the chicken is fully cooked, remove the lid and sprinkle the freshly grated Parmesan cheese on top. Stir it in gently, allowing that cheese to melt into the sauce, creating a luscious, creamy coating.
Step 8: Serve and Enjoy
- Serve the chicken hot, spooning extra sauce over the top. Pair it with your preferred sides, be it rice, quinoa, or a vibrant salad.
