Ingredients

  • 1.5 pounds ground turkey breast
  • 1/4 tablespoon pink curing salt
  • 2 tablespoons filtered water
  • 1 teaspoon coarse kosher salt
  • 1/4 tablespoon freshly cracked black pepper
  • 1/4 tablespoon onion powder
  • 1/4 tablespoon smoked paprika
  • 1/4 tablespoon garlic powder
  • 1/4 tablespoon dried sage
  • 1 tablespoon hickory liquid smoke
  • 1 teaspoon Worcestershire sauce
  • 1/4 tablespoon cayenne pepper

Method

Step 1: Prepare the Meat Mixture
  1. First, gather all your ingredients in a bowl. Add the ground turkey, salt, curing salt, water, and your selected spices.
  2. Stir until everything is evenly mixed. You want to ensure that the spices are well-distributed, without any clumps.
Step 2: Spread the Mixture
  1. Next, you will need to prepare a dehydrator or a sheet pan lined with parchment paper. If you’re using a dehydrator, spread the turkey mixture into an even layer. If you're using an oven, spread the mixture flat, about ¼ inch thick.
Step 3: Dehydrate the Meat
  1. Set your dehydrator to 160°F (or 70°C), or if using the oven, set it to the same temperature with the door slightly ajar to allow moisture to escape.
  2. Let it dry for about 4 to 6 hours, checking periodically. You should look for a dry, leathery texture without any sticky spots.
Step 4: Cooling and Storing
  1. When your jerky is finished, remove it from the dehydrator or oven. Allow it to cool completely.
  2. Once cooled, cut it into snack-sized pieces. Store yo

Notes

Use lean ground turkey: Opt for ground turkey breast to keep your jerky healthy and lean.
Experiment with flavors: Try different spices like curry powder or Italian seasoning to switch things up!
Check the consistency: Make sure the jerky is dry enough to avoid spoilage. A good indicator is that it should bend without breaking.
Store in a dark place: Keep your finished jerky in a dark, cool area for optimal freshness.
Use a vacuum sealer: For longer storage, consider vacuum sealing your jerky. It helps keep air out and flavors intact.
