Fried Tofu with Garlic Sauce - Fried Tofu with Garlic Sauce

Before diving into the sublime realm of fried tofu with garlic sauce, let’s consider what makes the experience even better. Picture this: a bright, fresh salad on the side, with crisp greens, cucumbers, and a zesty lemon vinaigrette.
Or perhaps steamed jasmine rice, fluffy and fragrant, ready to soak up that delicious garlic sauce. If you’re feeling adventurous, try pairing this dish with some spicy kimchi. The crunch and heat from the kimchi contrast beautifully with the silky tofu.

Ingredients

  • 1 pack medium-firm tofu
  • 6 garlic cloves, minced
  • 1 cup tapioca starch
  • 2 tablespoon light soy sauce
  • 3 tablespoon vegetarian mushroom oyster sauce
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon brown sugar
  • 1 teaspoon freshly grated ginger optional, for a hint of warmth
  • 1 teaspoon rice vinegar optional, for a touch of tang
  • 1 tablespoon toasted sesame seeds
  • 1 small red chili, sliced optional, for extra heat

Method

  1. Let’s get to the good stuff—the cooking process! Here’s a breakdown of how to whip up this delightful dish.
Step 1: Prepare the Tofu
  1. Start by draining the tofu and pressing it. This helps remove excess moisture, ensuring the tofu crisps up nicely. Wrap it in a clean towel and place something heavy on top for about 10 minutes. Afterward, cut the tofu into bite-sized cubes. The shape doesn’t need to be uniform, but about an inch is ideal.
Step 2: Coat the Tofu
  1. Next, in a bowl, toss the tofu cubes with tapioca starch. This is the secret to getting that crispy exterior. Ensure all the pieces are coated well. The starch will cling nicely during frying, creating a delightful crunch.
Step 3: Heat the Oil
  1. In a large skillet or frying pan, heat about 2–3 tablespoons of oil over medium-high heat. You want it hot but not smoking. I often test by dropping in a small piece of tofu; if it sizzles, you’re ready to go.
Step 4: Fry the Tofu
  1. Once the oil is hot, carefully place the coated tofu cubes in the pan, making sure not to overcrowd them. Fry for around 3–4 minutes on each side, or until they turn a golden brown. It's mesmerizing to watch the transformation as they crisp up!
Step 5: Make the Garlic Sauce
  1. While the tofu is frying, you can prepare the garlic sauce. In a small saucepan, combine the minced garlic, soy sauce, mushroom oyster sauce, sesame oil, brown sugar, and ginger (if using). Stir over low heat until the sugar dissolves. The aroma at this point is divine!
Step 6: Combine
  1. Once the tofu is golden, remove it from the pan, draining on paper towels. Pour the garlic sauce over the crispy tofu and toss gently to coat each piece. You can add a splash of rice vinegar here for a bit of acidity if you like.
Step 7: Garnish
  1. Finally, sprinkle the beautifully coated tofu with toasted sesame seeds and sliced chili for an eye-catching finish. The contrast of textures and colors makes this dish visually appealing!

Notes

Tofu: A protein powerhouse, tofu is low in calories and rich in iron. Choosing medium-firm tofu gives you the best of both worlds—enough structure to hold up during frying while still being juicy.
Garlic: Not just an aromatic powerhouse, garlic is also packed with antioxidants. It lends a rich, savory flavor that’s hard to beat.
Tapioca Starch: This gluten-free starch is perfect for achieving that crunch we love. It has a neutral flavor, making it ideal for coating.
Soy Sauce: Light soy sauce delivers a salty, umami kick. If you are gluten-free, opt for a gluten-free variant.
Mushroom Oyster Sauce: This vegetarian option provides a complex flavor profile. If you’ve never tried it, I highly recommend it for its depth and richness.
Brown Sugar: The touch of sweetness in brown sugar balances the savory elements. You can substitute with maple syrup if you want a healthier option.
Sesame Oil: Toasted sesame oil is a staple in Asian cooking. Its warm, nutty flavor elevates any dish.
Rice Vinegar: This adds a hint of tang that's subtle but impactful. It cuts through the richness of the tofu and sauce.
Sesame Seeds: These seeds offer a delightful crunch, and they’re packed with calcium, making them a healthy garnish.
