Step 1: Prepare the Shrimp
  1. Start by marinating the shrimp. Combine the shrimp, ginger, sea salt, white pepper, and Shaoxing wine in a bowl. Allow this mixture to sit for about 15-20 minutes. This step ensures the shrimp is full of flavor.
Step 2: Make the Rice Batter
  1. In another bowl, whisk together the rice flour, tapioca starch, water, and salt until smooth. The mixture should have a consistency similar to thin pancake batter.
Step 3: Prepare the Steamer
  1. Fill a large pot with water and bring it to a boil. Line a steaming tray with parchment paper to prevent sticking. If you have a flat steaming dish or tray, that works best.
