Method

  1. Let’s roll up our sleeves and get cooking. Here’s how to make this delicious meal in easy-to-follow steps.
Step 1: Prepare the Sauce
  1. First, grab a small bowl and whisk together the fish sauce, ground white pepper, light brown sugar, lime juice, oyster sauce, and dark soy sauce.
  2. This sauce is the star of the dish, and it binds all the flavors together beautifully. You want a mix that’s a little salty and a touch tangy, so treat it with the gravity it deserves.
Step 2: Marinate the Chicken
  1. Now, take your sliced chicken breast and place it into another bowl. Sprinkle in the minced garlic, grated ginger, chopped red chili, and a pinch of salt.
  2. Give it a good mix to marinate. Let it rest for about 15-20 minutes. This allows the flavors to soak in, making each bite more tasty than the last.
Step 3: Cook the Noodles
  1. While the chicken absorbs the flavors, bring a pot of water to boil. Once bubbling, toss in the dried egg noodles. Cook them according to the package instructions, usually around 4-5 minutes until al dente. Drain and set aside, but hold on to a splash of the pasta water.
Step 4: Stir Fry the Chicken
  1. In a large pan or wok, heat the neutral cooking oil over high heat. Once hot, add the marinated chicken to the pan. Sizzle it for about 5-7 minutes until it’s cooked through and slightly browned. The high heat is key; don’t overcrowd the pan, as you want that lovely sear!
Step 5: Add Vegetables
  1. Next, toss in the sliced bell pepper, chestnut mushrooms, and matchstick carrots. Stir-fry for another 2-3 minutes. You want them to retain some crunch – that’s where the joy really lies!
Step 6: Combine Noodles and Sauce
  1. At this point, add the cooked noodles, snap peas, and the sauce you whipped up earlier. Mix everything together on high heat for another couple of minutes.
  2. Make sure all the ingredients are well-coated. If it looks a bit dry, feel free to add that reserved pasta water a tablespoon at a time.
Step 7: Final Touches
  1. To finish off, drizzle some toasted sesame oil over the stir fry and toss in the separated green parts of the spring onions. Mix well. This final step adds such a lovely fragrance. You could almost bottle it up and sell it!
Step 8: Serve and Garnish
  1. Serve the stir fry hot. Top it with crushed toasted peanuts and a sprinkle of sesame seeds. These garnishes add texture and flavor, elevating the dish further. Enjoy it fresh for the best experience.

Notes

Let’s break down the ingredients. It’s essential to know what each contributes.
  1. Fish Sauce: Adds depth and umami. It’s a staple in many Asian cuisines, enhancing flavors without overpowering them.
  2. Ground White Pepper: This has a subtle heat that goes unnoticed until the flavors meld together. It’s less pungent than black pepper.
  3. Light Brown Sugar: It balances the salty and tart elements, rounding out the flavors beautifully.
  4. Fresh Lime Juice: This adds brightness to the mix. The acidity elevates everything else on your plate.
  5. Oyster Sauce: A rich element that deepens the taste, providing a savory note that fits perfectly with chicken.
  6. Dried Egg Noodles: They bring a chewy texture and absorb the sauce well. You can use other noodles like rice noodles if preferred.
  7. Chili: It brings heat without being excessive. You can adjust this based on your spice tolerance.
  8. Chicken Breast: Lean and versatile, it soaks up the marinade and becomes juicy when cooked right.
  9. Vegetables: These not only add color but also vital nutrients. Feel free to swap for your favorites.
Toasted Sesame Oil: A final touch that gives a nutty aroma. It’s the finishing flourish to your stir fry.
