  • cup tapioca pearls
  • 1 cup whole milk or your preferred milk
  • 1-2 tablespoons caramelized brown sugar syrup
  • 1 teaspoon vanilla extract adds a lovely layer of flavor
  • Optional: A pinch of cinnamon powder for spice lovers!

Step 1: Prepare the Tapioca Pearls
  1. Start by boiling water in a pot. For every ounce of tapioca pearls, use around 7-8 ounces of water. Once boiling, add the pearls to the pot. Keep them moving—this helps prevent them from sticking together.
Step 2: Cook the Pearls
  1. Let the pearls cook according to the package instructions, generally about 15 to 30 minutes, depending on their size. Stir every few minutes to ensure an even cook.
Step 3: Rinse and Sweeten
  1. Once cooked, drain the pearls in a fine mesh strainer. Rinse under cold water for a minute. This step helps achieve that perfect chewiness. Pour the warm brown sugar syrup over the pearls to coat them thoroughly. Set aside to absorb the sweetness.
Step 4: Brew the Tea
  1. Meanwhile, steep your black tea in ¼ cup of hot water for about 5 minutes. Adjust the steeping time based on how strong you prefer your tea. Remove the tea bag and set aside to cool.
Step 5: Mix the Drink
  1. In a glass, add the grilled tapioca pearls on the bottom. Pour the brewed tea over them, followed by the milk. Add vanilla extract and stir gently to combine.
