Ingredients
  

  • pounds flank or flat iron steak, thinly sliced into ¼-inch strips
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons cornstarch
  • 1 tablespoon canola oil or neutral vegetable oil
  • 4 large garlic cloves, finely minced
  • 1-2 inch piece of fresh ginger, peeled and minced
  • 1 cup sugar snap peas or snow peas
  • 1-2 baby bok choy heads, halved or quartered
  • ¼ cup low-sodium soy sauce
  • 1 teaspoon toasted sesame oil
  • ¼ cup beef or chicken stock
  • 1 tablespoon sambal oelek chili paste
  • 4 tablespoons unsalted butter
  • 1 teaspoon toasted sesame seeds optional, for garnish
  • Green onions, thinly sliced optional, for garnish
  • Fresh parsley or cilantro, finely chopped optional, for garnish
  • Steamed rice, for serving

Method
 

Step 1: Prepare the Steak
  1. First things first. Take your flank or flat iron steak and slice it into ¼-inch strips. Ensure you cut against the grain for tenderness. Once sliced, season them with salt and pepper. Sprinkle cornstarch over the beef; this will help achieve a crispy outside when frying.
Step 2: Get the Cooking Oil Ready
  1. In a large skillet or wok, heat the canola oil over medium-high heat. You want it hot enough to sizzle when the beef hits the pan.
Step 3: Stir-Fry the Steak
  1. Add the seasoned beef to the skillet. Let it cook for a couple of minutes without stirring so it can sear nicely. Turn it occasionally until it’s browned but not overcooked. This should take about 5 minutes. Remove the beef from the pan and set it aside.
Step 4: Add Aromatics
  1. In the same skillet, throw in the minced garlic and ginger. Sauté for just 30 seconds. You want them fragrant but not burnt. The aroma will fill your kitchen instantly!
Step 5: Toss in the Veggies
  1. Now, add in the sugar snap peas or snow peas and bok choy. Stir-fry for about 2-3 minutes until they are vibrant and tender-crisp.
Step 6: Create the Sauce
  1. Pour in the soy sauce, toasted sesame oil, beef or chicken stock, and sambal oelek. Mix well and let it simmer for a minute so the flavors meld together.
Step 7: Combine Everything
  1. Return the steak to the skillet. Add the butter and toss everything together until the steak is heated through and coated in the sauce. This will take about 2 minutes.
Step 8: Serve and Garnish
  1. Plate your stir fry over a bed of steamed rice. Sprinkle with sesame seeds, chopped green onions, and fresh parsley or cilantro for an extra pop of color and flavor.

Notes

  • Prep Ahead: Slice the steak and veggies in advance. This saves time during busy weeknights.
  • Don’t Overcrowd the Pan: If you’re cooking for a crowd, do this in batches. Overcrowding will steam the meat instead of searing it.
  • Adjust Spice Levels: If sambal oelek is too hot, start with a smaller amount. You can always add more to elevate the heat.
