Ingredients

Sauce:
  • 2 tbsp oyster sauce extra for umami depth
  • 2.5 tbsp finely minced fresh garlic
  • 1.5 tbsp low-sodium soy sauce
  • 1 tbsp brown sugar adds subtle molasses depth
  • 0.5–1 tbsp coarsely ground black pepper adjust to heat preference
  • 1 tbsp rice vinegar adds brightness
  • 2 tbsp tomato ketchup
  • 1 tsp sesame oil for nutty flavor
Main Ingredients:
  • 3–4 cups day-old cooked rice
  • 2 cups crisp-tender broccoli florets
  • 1.5 lb thinly sliced beef sirloin or flank steak
  • 2 tbsp neutral oil like canola or grapeseed
  • 3 tbsp cornstarch for coating
  • 1.5 tsp freshly ground black pepper
  • 2 tbsp rich oyster sauce

Method

Step 1: Prepare the Beef
  1. Start by thinly slicing your beef sirloin or flank steak. Aim for pieces that are no thicker than a quarter of an inch. You want them to cook quickly and evenly. Next, sprinkle the slices with cornstarch and black pepper, tossing gently to coat each piece.
Step 2: Make the Sauce
  1. In a bowl, combine oyster sauce, soy sauce, brown sugar, minced garlic, rice vinegar, tomato ketchup, and sesame oil. Whisk them together until smooth. This combination will serve as the flavorful foundation for your fried rice.
Step 3: Stir-fry the Broccoli
  1. In a large skillet or wok, heat 1 tablespoon of neutral oil over medium-high heat. Add the broccoli florets and stir-fry for about three to four minutes until they turn bright green and just tender. You want them to retain some crunch. After they’re done, remove them from the pan and set them aside.
Step 4: Cook the Beef
  1. Using the same skillet, add another tablespoon of oil. Once it’s hot, add the meat in a single layer. Avoid overcrowding the pan; you want to sear the beef rather than steam it. Cook for about 2-3 minutes on each side until browned. It should smell incredible! Remove the beef from the pan and set it aside with the broccoli.
Step 5: Bring It All Together
  1. In the same skillet, add the day-old cooked rice. Break up any clumps and stir-fry for a couple of minutes, allowing the rice to turn slightly golden. Then, add the broccoli and beef back into the pan. Pour the sauce over the mix, stirring well to coat everything evenly. The rice should absorb all those delicious flavors!
Step 6: Serve Hot
  1. Once everything is well combined and heated through, serve your beef and broccoli fried rice immediately. A sprinkle of sesame seeds on top can add an eye-catching final touch. And there you have it — a delicious meal ready to impress!

Notes

  • Use Day-Old Rice: Freshly cooked rice tends to clump together. Day-old rice has dehydrated a bit, making it easier to separate, resulting in that fantastic fried rice texture.
  • Prep Ahead: Chop your ingredients and whisk together the sauce beforehand to streamline the cooking process. It’s a great time-saver!
  • Don’t Overcook the Broccoli: Overcooked broccoli becomes mushy. Aim for that bright green color and slightly crunchy texture.
  • Adjust Seasoning: Taste as you cook! Everyone’s palate is different, so feel free to tweak the sauce ingredients to match your preferences.
  • Experiment with Proteins: Beef isn’t the only choice. Chicken, shrimp, or even tofu work beautifully with this recipe. Adjust cooking times to suit different proteins.
