Step 1: Cook the Bacon
- In a large skillet over medium heat, add the chopped bacon pieces. Cook until they’re almost crispy, about 8-10 minutes. You want them to render out that amazing fat but not overly crispy at this stage. Once cooked, transfer them to a paper towel-lined plate and let them cool. Once cooled, chop them into even finer bits.
Step 2: Caramelize the Onions
- Using the same skillet, reduce the heat to medium-low and add the extra light olive oil. When the oil is hot, toss in the sliced onions. Stir them frequently and allow them to caramelize, which will take about 20 minutes. Keep an eye on them; you want them golden and soft, not burnt. A few minutes before they are fully done, sprinkle in the brown sugar and fresh thyme. This will enhance their sweetness and develop a beautiful flavor. Stir for another 1-2 minutes until the sugar dissolves.
Step 3: Combine the Goodies
- Once your onions are sweet and singed to perfection, it’s time to bring everything together. In a baking dish, place the round of brie cheese in the center. Shower the caramelized onions over the brie, followed by the finely chopped bacon. Don’t be shy—get generous with it!
Step 4: Bake to Perfection
- Preheat your oven to 350°F (175°C). Pop the baking dish into the oven and bake for about 10 minutes. You want the brie to soften and begin oozing wonderfully, hinting at the creamy delight waiting to be enjoyed.
Step 5: Serve and Enjoy
- As soon as it’s out of the oven, you'll want to serve this while it’s hot. Grab some crusty French bread crostinis or your favorite crackers and dig in!
